About The Role

We are seeking an enthusiastic sous chef for a charming, family-owned pub with rooms in the picturesque Shropshire countryside. Recently refurbished, the pub is set to become a destination spot, with a food ethos centred on sustainability, local organic produce, and regenerative farming practices.
The owners also operate a nearby organic farm and kitchen garden, supplying top-quality produce to some of London’s best restaurants, as well as the pub itself. You would work under our talented head chef who has 20 + years of experience at restaurants such as St John, Rochelle Canteen and Soho House. This is an opportunity to learn a new approach to pub cuisine, using the freshest produce possible.

A two bedroom furnished flat is provided with this job. The successful candidate will be able to live there rent-free.

DUTIES
-Managing the day-to-day kitchen operations
-Training and developing the team
-Delivering an enticing sustainability-focused menu, working with exceptional produce to create seasonal dishes.
-Potential to work on the project of converting an adjacent building into a new bakery

EXPERIENCE & SKILLS:
- Proven experience as a Sous chef, or similar role in a restaurant setting
- Strong culinary skills with a focus on quality and sustainability
- Knowledge of food safety regulations and best practices
- Excellent team player
- Ability to work well under pressure in a fast-paced environment
- Strong organisational skills with attention to detail
- Creative mindset with the ability to develop new recipes depending on what is available from local producers and suppliers.
